7 Breakfast Recipes for Busy Runners

As runners, we are always on the go (literally) and while most of us make time for running, we don't have time for much else.  Seriously though, I know it's not just me when I say I can find time for a 12 mile run but very little extra time to fold the laundry or spend more than 10 minutes preparing breakfast in the morning.

That doesn't mean that I don't want whatever I choose to refuel with to taste like cardboard or be packed with junk, which is why I've come up with several tasty recipes that you can whip up in a flash and even take with you on the go!

All these recipes are gluten free and vegetarian or vegan!


Blueberry Vanilla Chia Pudding


Mason jars make everything easier, don't they? Just mix in dairy free milk, chia seeds and plant protein powder then let it sit overnight in the fridge.  Remove the next morning and top with nut butter and blueberries and you're good to go!


Spinach Mushroom Red Pepper Omelet Muffin


Craving a plate full of eggs and veggies but don't have time to whisk, chop and pour? Problem solved with these omelet muffins.  Just make them at the start of the week and each morning you can pop these portable protein packed omelets to go in the microwave and walk out the door!
